Meet Rob Smith, AKA Mr Secret Beaches or Mr Ibiza Walking Association. A Publisher and now your lovely island walking guide, Rob sent in this recipe as a healthier alternative to the energy bars you can buy in shops and fabulous to take and share with your friends on a nice IWA walk.
This year Rob will be publishing a walking book AND a secret restaurant book. If you didn’t know, he organises walks every Sunday for anyone, resident or tourist, with just a €5 charge which is donated to a different charity each week.
This recipe, wow… seriously… wow. This recipe deserves it´s own medal. Why? It´s raw, so it´s got no nasties in. It´s only 6 ingredients AND it takes about 15 minutes max to make. Dangerously easy. Try it and you will be hooked.
We added some cocoa nibs on top and some dried cranberries but it´s equally nice without.
Place pecans in the food processor and blitz until they are small and crumbly. Add the dates and process again until the mixture sticks together.
Add the remaining ingredients and process again until the mixture turns chocolatey brown. Stop processing before it gets too buttery. (There should still be air between the small bits so that you will be able to press them down into your brownie pan.
Put the mixture into a tray about 2cm deep and press down firmly. Refrigerate this raw brownie recipe for a couple of hours and then slice to the desired size.
NB. For the picture we shaped the mix and sat on a plate to firm up so it was easier for photography.
