Add the chia seeds to the base of a glass, make sure the glass is wide and tall enough to create layers. Add in the almond milk and stir. Put into fridge for 10 minutes. Take out and check, it should have set to a jelly consistency. If not put back into the fridge for another 10 minutes.
Add the mango to the blender and blend to a thick paste. Layer into the glass on top of the set chia seeds and almond milk.
Layer in your fruit and if needed leave in the fridge to chill before adding another layer.
Top with final fruit and nuts to create colour and texture.
