Charles is the owner at Bar 1805 Ibiza, French Bistro & Cocktail Bar, tucked in the bottom of the Dalt Vila.

Bar 1805 Ibiza is a French canteen celebrating the creation of Absinthe and the artists, writers and philosophers who were inspired by the fabled green liquid.

Charles moved here because he believed that Ibiza has everything, he had always lived in big cities so wanted a change, also wanted to learn Spanish and get a feel for their culture and wanted to stay in Europe and enjoy some sun.

This is his recipe, Moules Frites, a classic northern France/Belgium Dish. This is the basic version but the bar sell three different sauces, this is their star dish. We tasted it, even without the sauces, it was a delight. Light, gorgeous, clean and just morish.

Whole bowl devoured in less than 5 minutes. Seriously, you have to try this.




Step 1

Cook the chips. Cut up some thin long chips, make them even sized. Heat the oil in a shallow pan. Add the frites until they change colour and drain.

Step 2

In a sauce pan melt the butter/olive oil/coconut oil add the shallots and cook a couple minutes until translucent. Add the garlic and cook a minute more.

Add the cleaned mussels and pour the wine white. Wait 5-7 minutes till they open.

Finish with salt, pepper and parsley.



Step 3

Whilst the mussels are on the last few minutes throw the chips back into the oil and cook again. Now they are crispy and make the perfect dipping material for the mussel sauce. Drain and sprinkle with garlic powder and salt.
