Olivia Cooney Pop-Up Fitness Seared Flaxseed Tuna Steak With Avocado and Jewelled Quinoa

Inspired by residents created by Ibiza Kitchen presents Olivia Cooney, a part timer here on the island, however she comes bringing gifts,a gorgeous luxury fitness retreat. She loves the nature and stunning coastline, which she finds provides the perfect environment to create a balanced retreat, using the stunning nature as a gym; beach boot camps & runs , hill climbs and long interesting trails to walk. Vibrant, fresh, clean, high protien and super nutritious.




Step 1

Mix the seeds and mixed fruits, chopped pepper, cut tomatoes, parsley and spinach into a bowl  with the quinoa and stir. Stir together the olive oil, both citrus juice, chilli and soy and leave aside.

Step 2

Scatter flax seeds over the tuna steaks with a tiny amount of flax seed oil. Press the seeds into the tuna slightly and turn. Coat both sides.

Step 3

Heat a pan and coat lightly with oil (flaxseed oil would be perfect) the pan should be hot enough for the steak to sear lightly very quickly each side. The steak should need no more than 1 minute per side. The perfect steak is cooked on the outside and still pink in the middle.

Once cooked take out of the pan and leave for a minute covered before cutting.

Step 4

Serve with the dressing drizzled over the salad.
