Cut the banana lengthways and bake in the oven on a low heat of 160 degrees or gas mark 4 for 30 minutes or until golden. Take out leave to cool before putting in the fridge. They can stay here until you serve the mousse.
Put the avocado, honey and cocoa into the blender. Blend for 2 minutes or so, or until the consistency is a airy and light mousse.
Put the mousse into the glasses and place in the fridge to chill for at least 30 minutes before serving.
When ready to serve, sprinkle bee pollen onto the mouse and serve with the chilled and crisp banana spoons.
