Super Power Chicken And Vegetable Soup With a Miso, Ginger and Turmeric Broth

This is something to eat if you feel a little under the weather, if you want a nutriboost or something to make you feel better again.

The powerful medicinal turmeric, immune strengthening miso and ginger to help you store all the nutrients and help your digestion, makes this a recipe a delicious way to give your body what it needs. The vegetables we picked from the local grocers on the day, primarily because they looked good quality and found locally. Add in anything you like or love, try and throw in locally grown or foraged island goodies.

We boiled up the chicken bones to use as a stock, for vegetarians just use an organic stock cube and discount the chicken.

For meat eaters, the chicken adds flavour but also you get the nutritional boosters from drinking bone broth. Your immune system will love you forever.



Step 1

Make a bone broth. Simply cook the chicken until it´s roasted. Tear away the chicken meat and pile onto a plate. Add 200ml of water to a pot. Break down the bones and carcass of the chicken and boil in a pan for about 2 hours with some fresh herbs (rosemary and sage are gorgeous) garlic onion and some pepper.

Pour the broth liquid into another pan through a colander. Taking out all the bits and bones to leave you with a thin gorgeous tasting broth.

Add in the turmeric, miso, garlic and ginger and let it boil for 5 minutes. Taste and add honey and salt. Keep tasting until you feel the broth is to your taste.

Step 4

Add in all your cut and prepared vegetables then add in the chicken. Stir well. Add in a large chunk of chopped parsley. Cook on a medium heat for 30 minutes. No more if you like your vegetables a little al dente, cook for 20 minutes longer if you like the vegetables softer. Can be stored and eaten the day after, the flavours have sat together all night so it´s even more delicious. Store in the fridge.
