Super Simple Spanish Tomato, Garlic and Oregano Salad

There´s nothing better on a hot day than eating a fresh, vibrant and tangy tomato salad. This salad uses locally grown tomatoes a good variety in colours shapes and sizes make this salad very easy on the eye as well as the palate.

Step 1

Mix the oil and balsamic together. Place the chopped tomatoes on the plate and mix well with the garlic. Pour over the dressing generously and scatter with the oregano and chilli. Serve as a side to anything spanish, this recipe really does compliment most dishes.

Tomatoes are rich in vitamin C, which, like lycopene, is linked to reducing the risk of heart disease. Most of the vitamin C is concentrated in the jelly-like substance that encases the seeds. Tomatoes are also high in salicylates, which have an anti-clotting effect on the blood, and may be partially responsible for tomatoes’ protective effect against heart disease.
